Instructions

1. Crush the saffron lightly between your fingers and steep it in 1 tbsp warm milk for 10–15 minutes. The milk should turn deep gold — don’t rush this step; it’s where all the color and most of the aroma develops.
2. Warm the milk with the crushed cardamom over medium heat until steaming but not boiling. Small bubbles at the edge are the signal.
3. Add the bloomed saffron, threads and all, and the crushed almonds if using.
4. Steep off the heat, covered, for 5 minutes.
5. Sweeten with sugar or honey to taste.
6. Strain into cups (optional — the threads are edible), garnish with pistachios, and serve warm, ideally 30–60 minutes before bed.
